Chardonnay at Santa Barbara Winery


8.31.15-harvest-2The grapes are picked at night when it is cool and are brought to the winery early in the morning. Grapes are conveyed, stems and all, into the press. The pressing is done by a gentle large bladder which as it fills with air squeezes the grapes against a screen allowing the juice to fall to a pan below. The stems provide channels for the juice to escape otherwise the press would quickly plug up.
