Barrels require great care.
It is hard to imagine a less glamorous aspect of winemaking than barrel cleaning. Barrels emptied in the spring need to be cleaned again before harvest. A combination of hot water and ozone thoroughly cleanses and sanitizes the barrels and prepares them for the new wine. The interior is sprayed at different heights inside the barrel loosening any remaining tartrates and is soaked up by the oak maintaining its tightness.
It is all very automatic and thorough using a minimum of water.
